We are seeking a   Bar Manager   who can bring leadership, creativity, and structure to a growing beverage program that matches Norikase’s culinary excellence. This role is suited for someone who thrives in a high-end, design-driven environment and has a deep respect for the craft of hospitality.

Position Overview:

The Bar Manager is responsible for the overall leadership, strategy, and execution of Norikase’s bar program. This position goes beyond daily operations — it is an opportunity to   shape the creative direction and identity   of one of Jacksonville’s most respected beverage programs.

You will work closely with ownership, management, and the culinary team to deliver an experience that is refined, consistent, and profitable.

Key Responsibilities:

Leadership & Operations-

  • Lead all bar operations, ensuring consistency, efficiency, and elevated service standards.

  • Train, mentor, and schedule bartenders and barbacks to maintain professionalism and precision in every shift.

  • Oversee daily bar setup, prep, cleanliness, and closing procedures in compliance with DBPR and health regulations.

  • Maintain tight control over inventory, ordering, and product rotation — keeping beverage cost targets below 20–22%.

  • Create weekly and monthly sales and cost reports with insights on profitability and opportunities.

Creative Development-

  • Design and execute seasonal cocktail menus that reflect Japanese influence and modern presentation.

  • Source unique ingredients, syrups, and garnishes that align with Norikase’s aesthetic and culinary story.

  • Develop beverage pairings for omakase experiences and special tasting events.

  • Curate sake, wine, and spirits lists with focus on boutique and premium Japanese labels.

Financial & Vendor Management-

  • Build and maintain relationships with distributors, brokers, and local partners for cost efficiency and exclusive products.

  • Negotiate pricing, volume deals, and marketing support for beverage events.

  • Monitor weekly inventory levels and adjust pars to prevent waste and shortages.

  • Track performance metrics such as beverage sales mix, average ticket growth, and event ROI.

Team Culture & Guest Experience-

  • Foster a service culture that is disciplined yet approachable — rooted in genuine hospitality and respect for craft.

  • Collaborate with the management team on bar training for front-of-house staff, focusing on storytelling and product knowledge.

  • Lead pre-shift tastings, team education sessions, and creative workshops.

  • Uphold Norikase’s reputation as a destination for cocktail innovation and elevated service.


Qualifications:
  • Minimum 3–5 years of bar management experience in a high-end or craft-cocktail establishment.

  • Deep knowledge of spirits, sake, Japanese whisky, and cocktail technique.

  • Proven ability to manage beverage costs, ordering systems, and vendor relations.

  • Experience leading a bar team in a fine-dining or luxury hospitality environment.

  • Strong financial acumen with understanding of P&L accountability.

  • Excellent communication and leadership skills with the ability to inspire and motivate.

  • Creativity and a genuine passion for design, ingredients, and detail.

  • Familiarity with Michelin or James Beard-caliber operations preferred.

  • Must have or be able to obtain Responsible Vendor and Food Manager certifications.


Compensation & Benefits:
  • Base Salary:  $60,000/year
